BACON FLAVORED RIBS - Smoked Iberico Belly Ribs - Iberico belly ribs are in a class of their own and with this bacon flavored recipe you have an absolute winner in your hands Expert level: I know how my smoker works Total cooking time: 4 hour 45 minutes Preparation time 45 minutes Cooking time 4 hour 00 minutes Ingredients: Iberico Belly Ribs - 1 rack per person Olive oil - 2 tablespoons Bacon flavored bbq rub - 5 tablespoons per rack Ingredients Bacon Sauce: Diced Bacon - 1/2 cup Red onion - 1/2 cup Ketchup - 1 cup Apple cider vinegar - 1/2 cup Brown Sugar - 1/2 cup Worcestershire sauce - 1/4 cup Chili powder - 2 teaspoons Smoked paprika powder - 2 teaspoons Salt - 1 teaspoon Suggested tools: Bacon Gooness Rub - Wusthof carving knife - Smoke wood - Planning & Schedule: 04h45m -Start your barbecue or smoker and set it up for indirect heat. Temperature setting 110 degrees Celsius or 225 Fahrenheit. 04h15m – Remove the silver skin and cut the belly ribs in to a straight shape. 04h05m – Rub the ribs with olive oil and the bacon flavored rub 04h00m – Smoked the ribs for about 4 hours 01h10m – Render down the fat of the bacon by baking it in a pan. 00h55m – Separate the fat from the bacon 00h50m – Dice the red onion and soften it in the bacon fat 00h40m – Add the rest of the sauce ingredients, the bacon and let it simmer for 10 minutes 00h30m – Brush on the bacon barbecue sauce 2x during the last 30 minutes of smoking on the ribs 00h00m - Enjoy!!
